Chef Paul Witherington commenced at Sandhurst in late September and has developed a new all-day menu in the Hillview Restaurant. The spring menu features fresh ingredients creating clean, simple flavours that take inspiration from French cuisine. Dishes include old favourites as well as well as plenty of healthy and seasonal options such as soft shell crab burgers, Western Plains lamb chop and ocean trout, pictured.
Locally born and raised, Paul learned his craft in and around Melbourne before heading overseas and working in London and Greece. He has most recently come from Lindenderry at Red Hill and has also worked at Port Phillip Estate.
